Ingredients

- 1 stick of butter, mostly melted
- 4 cloves of garlic, minced
- 1/2 lemon for zest and 1 tablespoon of juice
- 1 tablespoon of Dijon mustard
- 1 teaspoon of paprika
- 1/2 teaspoon of cayenne or red pepper flakes
- 1/2 teaspoon of dried thyme
- 1 teaspoon of red pepper flakes or cayenne powder
- 1 tablespoon of chives or green onions, sliced
- 2 tablespoons of fresh parsley, minced
- Salt and pepper, adjusted to taste
- Optional: rosemary sprig and smashed garlic for the cast iron preparation
Instructions
- Let the steak reach room temperature, then pat dry and season with salt, pepper, and garlic.
- Heat a cast iron skillet over high heat until smoking hot.
- Add avocado oil to the skillet and place the steak in when it sizzles.
- Flip the steak and add butter, garlic, and herbs, spooning the melted butter over the steak.
- Aim for medium-rare at 130°F with a meat thermometer.
- Let the steak rest for at least 5 minutes.
- Mix softened butter with parsley, green onions, Dijon mustard, lemon juice, zest, and spices until creamy.
- Slice the steak against the grain and top with a dollop of cowboy butter.
Notes
For best flavor, use a good quality steak and ensure your skillet is hot enough for a great sear.
