Sizzling Cowboy Butter Steak

A juicy steak topped with creamy, herby cowboy butter, perfect for a special meal or impressing friends.

Ingredients

  • 1 stick of butter, mostly melted
  • 4 cloves of garlic, minced
  • 1/2 lemon for zest and 1 tablespoon of juice
  • 1 tablespoon of Dijon mustard
  • 1 teaspoon of paprika
  • 1/2 teaspoon of cayenne or red pepper flakes
  • 1/2 teaspoon of dried thyme
  • 1 teaspoon of red pepper flakes or cayenne powder
  • 1 tablespoon of chives or green onions, sliced
  • 2 tablespoons of fresh parsley, minced
  • Salt and pepper, adjusted to taste
  • Optional: rosemary sprig and smashed garlic for the cast iron preparation

Instructions

  1. Let the steak reach room temperature, then pat dry and season with salt, pepper, and garlic.
  2. Heat a cast iron skillet over high heat until smoking hot.
  3. Add avocado oil to the skillet and place the steak in when it sizzles.
  4. Flip the steak and add butter, garlic, and herbs, spooning the melted butter over the steak.
  5. Aim for medium-rare at 130°F with a meat thermometer.
  6. Let the steak rest for at least 5 minutes.
  7. Mix softened butter with parsley, green onions, Dijon mustard, lemon juice, zest, and spices until creamy.
  8. Slice the steak against the grain and top with a dollop of cowboy butter.

Notes

For best flavor, use a good quality steak and ensure your skillet is hot enough for a great sear.
