Slow Cooker Chicken Stew

Ingredients

  • 2 pounds boneless, skinless chicken thighs or breasts
  • 3 carrots, diced
  • 3 celery stalks, diced
  • 1 onion, diced
  • 4 medium potatoes, peeled and cubed
  • 4 cloves garlic, minced
  • 4 cups low-sodium chicken broth
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 2 bay leaves
  • Salt and pepper, to taste
  • 1/4 cup all-purpose flour (optional, for thickening)
  • Fresh parsley, chopped (for garnish, optional)

Instructions

  1. Start by heating a skillet on medium-high heat. Add a little oil to the pan. Once hot, place the chicken in the skillet to sear until golden brown on both sides for about 4-5 minutes.
  2. Transfer the seared chicken to your slow cooker. Add the diced carrots, celery, onion, potatoes, minced garlic, and bay leaves.
  3. Sprinkle the dried thyme, salt, and pepper over the ingredients in the slow cooker. Stir gently to combine.
  4. Pour in the low-sodium chicken broth. If desired for a thicker stew, mix the all-purpose flour with a little broth until smooth, then add to the slow cooker.
  5. Cover the slow cooker and set it to cook on low for 6-8 hours or on high for 3-4 hours.
  6. Once cooking is complete, remove the bay leaves, taste, and adjust seasoning if needed. Serve in bowls garnished with fresh parsley if desired.

Notes

Searing the chicken adds depth to the stew’s flavor. Feel free to modify vegetables and herbs according to your preference.
