Slow Cooker Cowboy Casserole

A hearty and easy slow cooker dish combining ground beef, beans, corn, and cheddar cheese, perfect for busy days.

Ingredients

  • 1 lb ground beef
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 can (15 oz) corn, drained
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 cup diced onions
  • 1 cup diced bell peppers
  • 2 cups shredded cheddar cheese
  • 2 cups frozen tater tots
  • 1 packet taco seasoning
  • Salt and pepper to taste

Instructions

  1. In a slow cooker, add the ground beef and cook until browned. Drain excess fat.
  2. Add black beans, corn, diced tomatoes, onions, bell peppers, taco seasoning, salt, and pepper to the slow cooker. Stir well to combine.
  3. Cover and cook on low for 240-360 minutes.
  4. About 30 minutes before serving, top the mixture with tater tots and shredded cheddar cheese. Cover and cook until cheese is melted and tater tots are golden.
  5. Serve warm and enjoy!

Notes

For extra nutrition, consider adding zucchini or mushrooms. Adjust seasoning to your taste, and ensure the lid is on tight while cooking.
