- 1 lb ground beef
- 1 can (15 oz) black beans, rinsed and drained
- 1 can (15 oz) corn, drained
- 1 can (10 oz) diced tomatoes with green chilies
- 1 cup diced onions
- 1 cup diced bell peppers
- 2 cups shredded cheddar cheese
- 2 cups frozen tater tots
- 1 packet taco seasoning
- Salt and pepper to taste
Instructions
- In a slow cooker, add the ground beef and cook until browned. Drain excess fat.
- Add black beans, corn, diced tomatoes, onions, bell peppers, taco seasoning, salt, and pepper to the slow cooker. Stir well to combine.
- Cover and cook on low for 240-360 minutes.
- About 30 minutes before serving, top the mixture with tater tots and shredded cheddar cheese. Cover and cook until cheese is melted and tater tots are golden.
- Serve warm and enjoy!
Notes
For extra nutrition, consider adding zucchini or mushrooms. Adjust seasoning to your taste, and ensure the lid is on tight while cooking.
