- 4 boneless, skinless chicken breasts
- 1 cup long-grain rice
- 2 cups chicken broth
- 1 lemon (zested and juiced)
- 2 tablespoons olive oil
- 2 cloves garlic (minced)
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- Chopped fresh parsley for garnish
Instructions
- In a slow cooker, add the chicken breasts, rice, chicken broth, lemon juice, lemon zest, olive oil, garlic, thyme, rosemary, salt, and pepper.
- Stir to combine all ingredients.
- Cover and cook on low for 360-480 minutes or on high for 180-240 minutes, until the chicken is cooked through and the rice is tender.
- Once cooked, fluff the rice with a fork and serve the chicken over the rice.
- Garnish with chopped parsley before serving.
Notes
For extra flavor, add a splash of lemon juice just before serving. You can also add vegetables like peas or carrots for added nutrition.
