Ingredients

Instructions

  4. Stir to combine all ingredients.
  5. Cover and cook on low for 4-6 hours or until the chicken is cooked through and rice is tender.
  6. Once done, shred the chicken in the pot and mix through the rice.
  7. Serve warm, garnished with fresh parsley.

Notes

For more flavor, use bone-in chicken breasts. Adjust lemon juice and zest according to your taste. Add vegetables like peas, carrots, or spinach during the last hour of cooking for added nutrition.
