Smoked Gouda & Cabbage Bake

A delightful dish combining the creamy, smoky flavor of Gouda cheese with crunchy cabbage, perfect for family dinners or casual gatherings.

Ingredients

  • 3 cups Cabbage (finely shredded)
  • 1/2 cup Smoked Gouda (or Havarti or Parmesan cheese, shredded)
  • 1 Tbs Fresh Dill (minced)
  • 2 tsp Fresh Thyme (chopped)
  • 1 tsp Sea Salt
  • 6 TBS Milk
  • 1/4 cup Sour Cream
  • 2 Eggs
  • 1/2 cup Flour (all-purpose, Einkorn, whole wheat, or a combination)
  • 1/4 tsp Baking Powder
  • 1/8 tsp Baking Soda
  • 1/4 tsp Sea Salt

Instructions

  1. Preheat your oven to 400°F (200°C). Lightly butter an 8-inch cast-iron skillet and set aside.
  2. In a medium bowl, mix the finely shredded cabbage, smoked Gouda cheese, fresh herbs, and sea salt. Stir well and transfer this mixture to the prepared skillet.
  3. In a small bowl, whisk together the milk, sour cream, and eggs. Stir in the flour, baking powder, baking soda, and sea salt until well combined.
  4. Pour this mixture over the cabbage filling in the skillet. Use a fork to lift the cabbage slightly, allowing the batter to spread evenly throughout the pan.
  5. Bake in the preheated oven for about 30 minutes, or until the center is set and the top is golden brown.
  6. Garnish with fresh dill and thyme before serving.

Notes

Let the bake cool completely before storing. It can be kept in the refrigerator for 3-4 days.
