- 3 cups Cabbage (finely shredded)
- 1/2 cup Smoked Gouda (or Havarti or Parmesan cheese, shredded)
- 1 Tbs Fresh Dill (minced)
- 2 tsp Fresh Thyme (chopped)
- 1 tsp Sea Salt
- 6 TBS Milk
- 1/4 cup Sour Cream
- 2 Eggs
- 1/2 cup Flour (all-purpose, Einkorn, whole wheat, or a combination)
- 1/4 tsp Baking Powder
- 1/8 tsp Baking Soda
- 1/4 tsp Sea Salt
Instructions
- Preheat your oven to 400°F (200°C). Lightly butter an 8-inch cast-iron skillet and set aside.
- In a medium bowl, mix the finely shredded cabbage, smoked Gouda cheese, fresh herbs, and sea salt. Stir well and transfer this mixture to the prepared skillet.
- In a small bowl, whisk together the milk, sour cream, and eggs. Stir in the flour, baking powder, baking soda, and sea salt until well combined.
- Pour this mixture over the cabbage filling in the skillet. Use a fork to lift the cabbage slightly, allowing the batter to spread evenly throughout the pan.
- Bake in the preheated oven for about 30 minutes, or until the center is set and the top is golden brown.
- Garnish with fresh dill and thyme before serving.
Notes
Let the bake cool completely before storing. It can be kept in the refrigerator for 3-4 days.
