Snickerdoodle Banana Bread

  • ½ cup granulated sugar
  • ¼ cup brown sugar
  • ½ cup unsalted butter, melted
  • 2 eggs

  • 1 ¾ cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ¼ cup milk
  • 2 tablespoons granulated sugar (for topping)
  • 1 teaspoon ground cinnamon (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a loaf pan or line it with parchment paper.
  2. In a large mixing bowl, mash the bananas until smooth.
  3. Add the granulated sugar, brown sugar, melted butter, eggs, and vanilla extract to the bananas. Stir until all wet ingredients are combined.
  4. In a separate bowl, whisk together the flour, baking powder, baking soda, salt, and ground cinnamon.
  5. Gradually add the dry ingredients to the wet ingredients, alternating with the milk. Mix until everything is just combined.
  6. Pour the batter into the prepared loaf pan and smooth the top with a spatula.
  7. Sprinkle the cinnamon-sugar mixture evenly over the batter.
  8. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  9. Allow the bread to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Notes
