  • 2 teaspoons vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, beat together the softened butter, granulated sugar, and powdered sugar until light and fluffy.
  3. Incorporate the eggs one at a time, mixing well. Then stir in the lemon juice, lemon zest, and vanilla extract.
  4. In another bowl, whisk together the flour, baking soda, and salt. Gradually add this dry mixture to the wet ingredients, mixing until combined.
  5. Line a baking sheet with parchment paper.
  6. Drop rounded tablespoonfuls of dough onto the baking sheet, spaced apart.
  7. Bake for 10-12 minutes, until the edges are lightly golden.
  8. Allow the cookies to cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.

Notes

For thicker cookies, chill the dough for 30 minutes before baking. Use fresh lemon juice for the best flavor.
