Instructions
- Prepare the Dry Ingredients: In a medium bowl, whisk together the flour, baking soda, cinnamon, nutmeg, cloves, and salt.
- Cream the Butter and Sugar: In a large bowl, cream together the softened butter and sugar until light and fluffy (about 3 to 5 minutes).
- Add Pumpkin and Other Wet Ingredients: Beat in the pumpkin puree, egg, and 1 teaspoon of vanilla extract until smooth.
- Combine Wet and Dry Mixtures: Gradually mix the dry ingredients into the wet ingredients until just combined.
- Chill the Dough: Cover and chill the dough in the refrigerator for at least 1 hour.
- Preheat the Oven: Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
- Scoop the Dough: Use a cookie scoop or spoon to drop rounded tablespoons onto prepared baking sheets, spacing them 2 inches apart.
- Bake the Cookies: Bake for 10 to 12 minutes until edges are lightly golden.
- Cool the Cookies: Let cool on baking sheets for a few minutes before transferring to a wire rack.
- Make the Cream Cheese Frosting: Cream together the softened cream cheese and remaining butter until smooth, then gradually add powdered sugar and mix well.
- Adjust Frosting Consistency: Add vanilla and milk or cream to reach desired consistency.
- Frost the Cookies: Frost the cooled cookies generously with the cream cheese frosting.
- Decorate (Optional): Add sprinkles or nuts as decoration if desired.
- Serve and Enjoy: Enjoy immediately or store for later.

For a lighter treat, these cookies can be made without frosting.
