  • 4 cups powdered sugar
  • 2 teaspoons vanilla extract
  • 24 tablespoons milk (or heavy cream), for desired consistency

Instructions

  1. Prepare the Dry Ingredients: In a medium bowl, whisk together the flour, baking soda, cinnamon, nutmeg, cloves, and salt.
  2. Cream the Butter and Sugar: In a large bowl, cream together the softened butter and sugar until light and fluffy (about 3 to 5 minutes).
  3. Add Pumpkin and Other Wet Ingredients: Beat in the pumpkin puree, egg, and 1 teaspoon of vanilla extract until smooth.
  4. Combine Wet and Dry Mixtures: Gradually mix the dry ingredients into the wet ingredients until just combined.
  5. Chill the Dough: Cover and chill the dough in the refrigerator for at least 1 hour.
  6. Preheat the Oven: Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  7. Scoop the Dough: Use a cookie scoop or spoon to drop rounded tablespoons onto prepared baking sheets, spacing them 2 inches apart.
