Ingredients

- 2 pounds sweet potatoes
- 1/2 cup maple syrup
- 1/4 cup brown sugar
- 1 cup raisins
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1 cup mini marshmallows
- 1 cup pecans (chopped)
- 2 tablespoons melted vegan butter
Instructions
- Preheat your oven to 350°F (175°C).
- Peel and cube the sweet potatoes, then boil them in salted water until tender.
- Drain and mash the sweet potatoes until smooth and creamy.
- In a large bowl, mix together the mashed sweet potatoes, maple syrup, brown sugar, raisins, cinnamon, and nutmeg.
- Pour the mixture into a greased casserole dish and top with mini marshmallows and chopped pecans.
- Drizzle melted vegan butter over the top.
- Bake in the preheated oven for 30-35 minutes, until the marshmallows are golden brown.
- Serve warm as a side dish.
Notes
Store leftovers in an airtight container in the refrigerator for 4-5 days. Reheat portions in the microwave or oven.
