Southern Maple Sweet Potato Casserole

A warm and comforting Southern Maple Sweet Potato Casserole made with sweet potatoes, rich maple syrup, and topped with gooey marshmallows and crunchy pecans.

Ingredients

  • 2 pounds sweet potatoes
  • 1/2 cup maple syrup
  • 1/4 cup brown sugar
  • 1 cup raisins
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1 cup mini marshmallows
  • 1 cup pecans (chopped)
  • 2 tablespoons melted vegan butter

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Peel and cube the sweet potatoes, then boil them in salted water until tender.
  3. Drain and mash the sweet potatoes until smooth and creamy.
  4. In a large bowl, mix together the mashed sweet potatoes, maple syrup, brown sugar, raisins, cinnamon, and nutmeg.
  5. Pour the mixture into a greased casserole dish and top with mini marshmallows and chopped pecans.
  6. Drizzle melted vegan butter over the top.
  7. Bake in the preheated oven for 30-35 minutes, until the marshmallows are golden brown.
  8. Serve warm as a side dish.

Notes

Store leftovers in an airtight container in the refrigerator for 4-5 days. Reheat portions in the microwave or oven.
