Spicy Mexican-Style Street Potatoes

  • 4 large potatoes, peeled and diced
  • 2 tbsp vegetable oil
  • 1 tsp salt
  • 1 tsp smoked paprika
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • 1/4 tsp cayenne pepper
  • 2 cloves garlic, minced
  • 1 tbsp lime juice
  • Fresh cilantro, chopped (for garnish)

Instructions

  1. Heat oil in a large skillet over medium heat.
  2. Add diced potatoes and cook for 15 minutes, stirring occasionally, until they are golden and crispy.
  3. In a small bowl, mix salt, smoked paprika, chili powder, cumin, and cayenne pepper.
  4. Sprinkle the spice mix over the potatoes and stir to coat them evenly.
  5. Add minced garlic and cook for 1-2 minutes until fragrant.
  6. Remove from heat and drizzle with lime juice.
  7. Garnish with fresh cilantro before serving.

Notes

Cut the potatoes into even sizes for even cooking. Don’t overcrowd the skillet; it’s better to cook in batches if your skillet is small. Adjust the spice levels to your taste.
