Instructions

  1. Heat the oil in a large skillet over medium heat.
  2. Add the diced potatoes and cook for 15 minutes, stirring occasionally, until they are golden and crispy.
  3. In a small bowl, mix together salt, smoked paprika, chili powder, cumin, and cayenne pepper.
  4. Sprinkle the spice mix over the potatoes and stir to coat them evenly.
  5. Add the minced garlic and cook for 1-2 minutes until fragrant.
  6. Remove the skillet from heat and drizzle the potatoes with lime juice.
  7. Garnish with fresh cilantro before serving.
