Why Make This Recipe

Strawberry Chicken is a delightful dish that brings together the savory goodness of chicken with the sweet and fruity flavor of strawberries. This recipe is perfect for a quick weeknight dinner or a special occasion. It’s easy to prepare and packed with flavors that everyone will love. Plus, it might just impress your guests!

How to Make Strawberry Chicken

Ingredients:

  • 1 tablespoon olive oil
  • 2 boneless, skinless chicken breasts
  • ½ teaspoon sea salt
  • ¼ cup strawberry jam
  • 1 tablespoon good quality balsamic vinegar
  • 1 tablespoon water (extra if mixture is too thick)
  • ¼ cup fresh basil leaves (cut into ribbons or finely chopped)
  • 2 tablespoons crumbled goat cheese (optional)
  • ¼ cup fresh strawberries (sliced, optional)

Directions:

  1. Heat olive oil in a medium skillet over medium-high heat.
  2. Season chicken breasts with a sprinkle of salt on both sides and place in the pan. Cook for about 4-5 minutes on one side or until a nice golden crust forms.
  3. Flip the chicken and cook for another 4-5 minutes or until the chicken is fully cooked through. (Cook time will depend on the thickness of the chicken breasts.)
  4. Meanwhile, whisk together strawberry jam, balsamic vinegar, and water in a small bowl.
  5. When the chicken is just about finished cooking, pour the mixture over the top, nestling the chicken breasts into the sauce and scraping up any brown bits on the bottom of the pan.
  6. Reduce the heat and bring the sauce to a simmer, letting it bubble for 2-3 more minutes or until it has reduced and thickened a bit.
  7. Stir in most of the basil and simmer for 1 minute. (You may want to save a little for garnish.)
  8. Remove chicken breasts from the pan. Pour sauce over the top of each piece. Sprinkle with a little goat cheese if desired and garnish with remaining basil and sliced strawberries.

How to Serve Strawberry Chicken

Serve Strawberry Chicken warm on a plate, drizzling extra sauce over the top. It pairs well with rice, quinoa, or a simple salad. The fresh basil and strawberries add a nice touch for presentation.

How to Store Strawberry Chicken

To store leftover Strawberry Chicken, let it cool completely. Place it in an airtight container and store it in the refrigerator. It will stay fresh for up to 3 days. You can also freeze it for up to 2 months. Just make sure to thaw it in the refrigerator before reheating.

Tips to Make Strawberry Chicken

  • Use fresh strawberries for the best flavor.
  • Adjust the thickness of the sauce by adding more water if necessary.
  • Feel free to replace goat cheese with feta or leave it out altogether if you prefer.

Variation

You can add nuts like sliced almonds or walnuts for added crunch. If you like extra sweetness, consider adding a little honey to the sauce.
