- 1 tablespoon olive oil
- 2 boneless, skinless chicken breasts
- ½ teaspoon sea salt
- ¼ cup strawberry jam
- 1 tablespoon balsamic vinegar
- 1 tablespoon water (extra if mixture is too thick)
- ¼ cup fresh basil leaves (cut into ribbons or finely chopped)
- 2 tablespoons crumbled goat cheese (optional)
- ¼ cup fresh strawberries (sliced, optional)
Instructions
- Heat olive oil in a medium skillet over medium-high heat.
- Season chicken breasts with a sprinkle of salt on both sides and place in the pan. Cook for about 4-5 minutes on one side or until a nice golden crust forms.
- Flip the chicken and cook for another 4-5 minutes or until the chicken is fully cooked through.
- Meanwhile, whisk together strawberry jam, balsamic vinegar, and water in a small bowl.
- When the chicken is just about finished cooking, pour the mixture over the top and let it simmer for 2-3 more minutes until thickened.
- Stir in most of the basil and simmer for 1 minute, reserving some for garnish.
- Remove chicken from the pan, pour sauce over it, and sprinkle with goat cheese and remaining basil and strawberries if desired.
Notes
Serve warm with rice, quinoa, or salad. Store leftovers in an airtight container in the fridge for up to 3 days or freeze for up to 2 months.
