Delicious Strawberry Chocolate Cake

  • 1/2 teaspoon salt
  • 115 g unsalted butter (melted)
  • 100 g light-tasting oil
  • 100 g granulated sugar (for the cake)
  • 100 g brown sugar
  • 2 large eggs (room temperature)
  • 330 g milk (room temperature)
  • 250 g cream cheese (softened to room temperature)
  • 115 g unsalted butter (softened to room temperature for frosting)
  • 100 g powdered sugar
  • 70 g strawberry jam
  • 1 teaspoon vanilla extract
  • 200 g strawberries (finely diced)
  • 7 strawberries (halved for decoration)

Instructions

  1. Make the Strawberry Jam: In a saucepan, combine strawberries, granulated sugar, and water. Heat until thickened, about 10-15 minutes. Let cool.
  2. Prepare the Chocolate Cake: Preheat oven to 175°C (350°F). Grease two round cake pans. Sift together flour, cocoa powder, baking powder, baking soda, and salt.
  3. Mix melted butter, oil, granulated sugar, and brown sugar until smooth. Add eggs one at a time, then mix in milk.
  4. Combine wet and dry ingredients until smooth. Pour batter into prepared pans and bake for 25-30 minutes. Cool cakes in pans before transferring to wire racks.
  5. Make the Strawberry Frosting: Beat cream cheese and butter until smooth. Gradually add powdered sugar and vanilla. Fold in strawberry jam and diced strawberries.
  6. Assemble the Cake: Place one chocolate cake layer on a platter. Spread frosting on top, then add a layer of strawberry jam. Top with the second cake layer and frost the cake. Decorate with halved strawberries.

Notes
