Strawberry Earthquake Cake

Ingredients

  • 1 box of chocolate cake mix
  • 4 large eggs
  • 1 cup of water
  • 1/2 cup of vegetable oil
  • 1 cup of strawberries, chopped
  • 8 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1/2 cup shredded coconut
  • 1/2 cup chopped nuts (optional)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a 9×13 inch cake pan.
  2. In a large bowl, mix the chocolate cake mix, water, vegetable oil, and eggs until smooth.
  3. Pour half of the batter into the prepared pan.
  4. In another bowl, mix the softened cream cheese and powdered sugar until smooth.
  5. Drop spoonfuls of the cream cheese mixture into the cake batter.
  6. Sprinkle the chopped strawberries, coconut, and nuts over the cream cheese layer.
  7. Pour the remaining half of the cake batter over the top.
  8. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  9. Let it cool before serving. Enjoy your delightful strawberry earthquake cake!

Notes

Serve warm or at room temperature. Add whipped cream or vanilla ice cream for an extra treat.
