- 3/4 cup salted butter, softened
- 3/4 cup granulated sugar
- 1 large egg
- 1 1/2 teaspoons vanilla extract
- 1/2 teaspoon almond extract
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- Sprinkles for decoration
- 2 ounces cream cheese, softened
- 3 cups powdered sugar
- 1/4 cup butter, softened
- 2 tablespoons milk
- 1/4 teaspoon vanilla extract
- Optional: pink or red food coloring gel
Instructions
- Preheat your oven to 350°F (175°C) and grease two regular muffin pans with nonstick cooking spray.
- In a large bowl, beat the softened butter and granulated sugar with an electric mixer until light and fluffy.
- Add the egg, vanilla, and almond extracts to the butter mixture and beat until well combined.
- In another bowl, whisk together the flour, baking powder, and baking soda.
- Gradually add the flour mixture to the wet ingredients until a soft dough forms.
- Take 2 tablespoons of the dough and press it into each muffin cup, pushing it halfway up the sides.
- Bake for about 12 minutes or until the edges are lightly golden. Allow them to cool, then gently press the centers down to shape them into cups.
- In a separate bowl, beat the cream cheese and butter together until smooth. Gradually add the powdered sugar, milk, and vanilla extract; mix until creamy.
- Pipe the frosting into the cooled cookie cups and finish with sprinkles on top, if desired.
Notes
Store in an airtight container at room temperature for up to three days. Refrigerate for longer storage, but avoid freezing.
