- 1/2 cup unsalted butter, at room temperature
- 1 cup granulated sugar
- 1 large egg, at room temperature
- 1 1/2 teaspoons vanilla extract
- 1/4 teaspoon almond extract
- 1 3/4 cups all-purpose flour
- 1/2 teaspoon salt
Instructions
- In a stand mixer, blend butter and sugar until just combined, about 45 seconds.
- Add egg, vanilla, and almond extracts and mix until creamy, about 1 minute.
- Gradually add flour and salt, mixing until no streaks of flour remain.
- Shape the dough into a flat disk, wrap in plastic, and refrigerate for at least 1 hour.
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- Roll out the chilled dough to 1/4 inch thickness on a floured surface.
- Cut out shapes with cookie cutters and transfer to prepared baking sheets.
- Bake for 8 to 12 minutes until edges are golden brown.
- Allow cookies to cool completely on a wire rack before frosting or serving.
Notes
Store cookies in an airtight container at room temperature for up to a week. Freeze baked cookies for up to three months.
