- 1/2 cup Unsalted Butter (room temperature)
- 1 cup All-Purpose Flour
- 1/4 cup Powdered Sugar
- 1/2 cup Lemon Juice (from 2–3 lemons)
- 1 tbsp Lemon Zest (finely grated)
- 3 Large Eggs (room temperature)
- 1 1/2 cups Granulated Sugar
- 1/2 cup All-Purpose Flour (sifted)
- Powdered Sugar (for dusting)
Instructions
- Preheat the oven to 350°F (175°C). In a mixing bowl, combine 1 cup of all-purpose flour, 1/4 cup of powdered sugar, and 1/2 cup of unsalted butter. Mix until it forms a crumbly dough. Press this mixture into the bottom of a greased baking dish. Bake for about 15 minutes or until lightly golden.
- Whisk together the 3 large eggs and 1 1/2 cups of granulated sugar until smooth. Add in the 1/2 cup of lemon juice and 1 tablespoon of lemon zest. Gently mix in the sifted 1/2 cup of all-purpose flour until combined.
- Pour the lemon filling over the baked crust. Return to the oven and bake for another 20-25 minutes, or until the filling is set and slightly golden on top.
- Remove from the oven and let it cool completely in the dish. Dust with powdered sugar before cutting into squares.
Notes
For cleaner edges, allow the lemon bars to cool completely before cutting.
