- 1/2 cup Unsalted Butter (room temperature)
- 1 cup All-Purpose Flour
- 1/4 cup Powdered Sugar
- 1/2 cup Lemon Juice (from 2–3 lemons)
- 1 tbsp Lemon Zest (finely grated)
- 3 Large Eggs (room temperature)
- 1 1/2 cups Granulated Sugar
- 1/2 cup All-Purpose Flour (sifted)
- Powdered Sugar (for dusting)
Instructions
- Preheat your oven to 350°F (175°C).
- Cream together the unsalted butter and powdered sugar until light and fluffy.
- Add 1 cup of all-purpose flour and mix until combined.
- Press the mixture into the bottom of a greased 8×8 inch baking dish.
- Bake for 15-20 minutes until lightly golden.
- Whisk together the eggs and granulated sugar until well combined.
- Add the lemon juice, lemon zest, and sifted flour, and mix until smooth.
- Pour this lemon mixture over the baked shortbread crust.
- Return to the oven and bake for an additional 20-25 minutes.
- Allow the lemon bars to cool completely in the pan.
- Dust with powdered sugar on top.
Notes
Use fresh lemons for the best flavor and store in an airtight container.
