Super Easy Lemon Bars

Delicious lemon bars with a buttery shortbread crust and tangy lemon filling, perfect for any occasion.

Ingredients

  • 1/2 cup Unsalted Butter (room temperature)
  • 1 cup All-Purpose Flour
  • 1/4 cup Powdered Sugar
  • 1/2 cup Lemon Juice (from 23 lemons)
  • 1 tbsp Lemon Zest (finely grated)
  • 3 Large Eggs (room temperature)
  • 1 1/2 cups Granulated Sugar
  • 1/2 cup All-Purpose Flour (sifted)
  • Powdered Sugar (for dusting)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together the unsalted butter and powdered sugar until light and fluffy.
  3. Add 1 cup of all-purpose flour and mix until combined.
  4. Press the mixture into the bottom of a greased 8×8 inch baking dish.
  5. Bake for 15-20 minutes until lightly golden.
  6. Whisk together the eggs and granulated sugar until well combined.
  7. Add the lemon juice, lemon zest, and sifted flour, and mix until smooth.
  8. Pour this lemon mixture over the baked shortbread crust.
  9. Return to the oven and bake for an additional 20-25 minutes.
  10. Allow the lemon bars to cool completely in the pan.
  11. Dust with powdered sugar on top.

Notes

Use fresh lemons for the best flavor and store in an airtight container.
