Sweet Chili Chicken Rice Bowls

Ingredients

  • 2 chicken thighs
  • 1 cup cooked rice
  • 1/4 cup sweet chili sauce
  • 1 tablespoon soy sauce
  • 1 tablespoon olive oil
  • 1/2 bell pepper, sliced
  • 1/2 cup broccoli florets
  • Salt and pepper to taste
  • Green onions for garnish

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Season the chicken thighs with salt and pepper and add to the skillet. Cook for 5-7 minutes on each side until cooked through.
  3. Remove chicken from the skillet and let rest for a few minutes before slicing.
  4. In the same skillet, add sliced bell pepper and broccoli, and sauté for 3-4 minutes.
  5. Stir in the sweet chili sauce and soy sauce, allowing it to simmer for a minute.
  6. To assemble, place cooked rice in a bowl, top with sliced chicken and vegetables, and drizzle with any remaining sauce.
  7. Garnish with green onions and serve.
