- 2 chicken thighs
- 1 cup cooked rice
- 1/4 cup sweet chili sauce
- 1 tablespoon soy sauce
- 1 tablespoon olive oil
- 1/2 bell pepper, sliced
- 1/2 cup broccoli florets
- Salt and pepper to taste
- Green onions for garnish
Instructions
- Heat olive oil in a skillet over medium heat.
- Season the chicken thighs with salt and pepper and add to the skillet. Cook for 5-7 minutes on each side until cooked through.
- Remove chicken from the skillet and let rest for a few minutes before slicing.
- In the same skillet, add sliced bell pepper and broccoli, and sauté for 3-4 minutes.
- Stir in the sweet chili sauce and soy sauce, allowing it to simmer for a minute.
- To assemble, place cooked rice in a bowl, top with sliced chicken and vegetables, and drizzle with any remaining sauce.
- Garnish with green onions and serve.
