- 2 pounds chicken breasts
- 1 cup pineapple juice
- 1/2 cup soy sauce
- 1/4 cup brown sugar
- 1/4 cup ketchup
- 2 cloves garlic, minced
- 1 tablespoon ginger, grated
- 1 bell pepper, chopped
- 1 onion, sliced
- Salt and pepper to taste
- Green onions for garnish
Instructions
- In a mixing bowl, combine pineapple juice, soy sauce, brown sugar, ketchup, garlic, and ginger to make the marinade.
- Place the chicken breasts in the slow cooker.
- Pour the marinade over the chicken, then add the chopped bell pepper and sliced onion.
- Season with salt and pepper.
- Cover and cook on low for 360 minutes or on high for 240 minutes.
- Once cooked, shred the chicken and stir to mix with the sauce.
- Serve garnished with green onions.
Notes
For extra flavor, marinate the chicken in the sauce for a few hours before cooking. Feel free to add your favorite vegetables, like carrots or snap peas. If you like it spicy, consider adding red pepper flakes or sliced jalapeños.
