  • 2 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 1 bell pepper, chopped
  • 1 onion, sliced
  • Salt and pepper to taste
  • Green onions for garnish

Instructions

  1. In a mixing bowl, combine pineapple juice, soy sauce, brown sugar, ketchup, garlic, and ginger to make the marinade.
  2. Place the chicken breasts in the slow cooker.
  3. Pour the marinade over the chicken, then add the chopped bell pepper and sliced onion.
  4. Season with salt and pepper.
  5. Cover and cook on low for 360 minutes or on high for 240 minutes.
  6. Once cooked, shred the chicken and stir to mix with the sauce.
  7. Serve garnished with green onions.

Notes

For extra flavor, marinate the chicken in the sauce for a few hours before cooking. Feel free to add your favorite vegetables, like carrots or snap peas. If you like it spicy, consider adding red pepper flakes or sliced jalapeños.
