- 1 large sweet potato (~500 g), chopped into 1/2 inch pieces
- 2 cups mushrooms, diced
- 1 red bell pepper, diced
- 1 cup spinach, chopped
- 8 eggs
- 1 cup cottage cheese, 2%
- 2 tsp Everything Bagel Seasoning (optional)
- 3/4 cup shredded cheese
Instructions
- Preheat your oven to 350°F (175°C). Grease 4 oven-safe meal prep containers and arrange them on a sheet pan.
- Place the chopped sweet potatoes evenly in each meal prep container.
- Divide the mushrooms, bell pepper, and spinach among the containers.
- For the eggs, whisk 2 eggs and add ¼ cup of cottage cheese to each container or whisk all 8 eggs and 1 cup of cottage cheese together and evenly distribute this mixture into the containers.
- Sprinkle ½ tsp of Everything Bagel seasoning onto each container if you’re using it.
- Top each container with an even amount of shredded cheese.
- Bake the containers in the oven for 35-40 minutes, ensuring the eggs and sweet potatoes are fully cooked.
Notes
Store leftovers in the refrigerator for up to 4 days. Add extra toppings like avocado or salsa when serving.
