Sweet Potato Breakfast Bowl Meal Prep

Ingredients

  • 1 large sweet potato (~500 g), chopped into 1/2 inch pieces
  • 2 cups mushrooms, diced
  • 1 red bell pepper, diced
  • 1 cup spinach, chopped
  • 8 eggs
  • 1 cup cottage cheese, 2%
  • 2 tsp Everything Bagel Seasoning (optional)
  • 3/4 cup shredded cheese

Instructions

  1. Preheat your oven to 350°F (175°C). Grease 4 oven-safe meal prep containers and arrange them on a sheet pan.
  2. Place the chopped sweet potatoes evenly in each meal prep container.
  3. Divide the mushrooms, bell pepper, and spinach among the containers.
  4. For the eggs, whisk 2 eggs and add ¼ cup of cottage cheese to each container or whisk all 8 eggs and 1 cup of cottage cheese together and evenly distribute this mixture into the containers.
  5. Sprinkle ½ tsp of Everything Bagel seasoning onto each container if you’re using it.
  6. Top each container with an even amount of shredded cheese.
  7. Bake the containers in the oven for 35-40 minutes, ensuring the eggs and sweet potatoes are fully cooked.

Notes

Store leftovers in the refrigerator for up to 4 days. Add extra toppings like avocado or salsa when serving.
