Sweet Potato Casserole

Ingredients

  • 4 cups mashed sweet potatoes
  • 1/2 cup sugar
  • 1/2 cup milk
  • 1/4 cup butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup mini marshmallows

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the mashed sweet potatoes, sugar, milk, melted butter, eggs, and vanilla extract. Mix until smooth and creamy.
  3. Transfer the mixture to a baking dish and smooth the top.
  4. Bake for 25 minutes.
  5. Remove from the oven and sprinkle mini marshmallows on top.
  6. Return to the oven and bake for an additional 10 minutes until marshmallows are golden brown.
  7. Let it cool slightly before serving warm.
