- 4 cups mashed sweet potatoes
- 1/2 cup sugar
- 1/2 cup milk
- 1/4 cup butter, melted
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup mini marshmallows
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the mashed sweet potatoes, sugar, milk, melted butter, eggs, and vanilla extract. Mix until smooth and creamy.
- Transfer the mixture to a baking dish and smooth the top.
- Bake for 25 minutes.
- Remove from the oven and sprinkle mini marshmallows on top.
- Return to the oven and bake for an additional 10 minutes until marshmallows are golden brown.
- Let it cool slightly before serving warm.
