- 4 cups Sweet Potatoes (Cubed)
- 2 tablespoons Olive Oil (Or avocado oil)
- 1 teaspoon Smoked Paprika (Or regular paprika)

- 1 pound Ground Beef (Or turkey, chicken, or black beans)
- 2 tablespoons Taco Seasoning (Homemade or store-bought)
- 1 cup Pico de Gallo (Diced tomatoes, onion, cilantro)
- 1 cup Guacamole (Mashed avocado with lime juice)
- 1/2 cup Sour Cream (Or Greek yogurt)
- to taste Optional Toppings (Crumbled cheese, lime wedges, tortilla chips)
Instructions
- Preheat your oven to 425°F (220°C).
- In a large bowl, toss the cubed sweet potatoes with olive oil, smoked paprika, salt, and pepper.
- Spread the sweet potatoes on a baking sheet in a single layer. Roast in the oven for about 25-30 minutes, or until tender and slightly crispy.
- While the sweet potatoes are roasting, heat a skillet over medium-high heat. Add the ground beef (or your chosen protein) and cook until browned, about 5-7 minutes.
- Stir in the taco seasoning and cook for another 2-3 minutes until fragrant.
- Once the sweet potatoes are done, remove them from the oven.
- To assemble the taco bowl, layer the roasted sweet potatoes at the bottom, followed by the seasoned meat.
- Top the bowl with pico de gallo, guacamole, and sour cream. Add any optional toppings if desired.
Notes
For added flavor, marinate the meat in the taco seasoning for a couple of hours before cooking. Variations can include using different proteins or adding more veggies.
