Sweet Potato Turkey Chili

A warm and filling chili made with ground turkey and sweet potatoes, perfect for chilly nights.

Ingredients

  • 1 pound ground turkey
  • 2 medium sweet potatoes, diced
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup corn (fresh or frozen)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 cups chicken broth
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. In a large pot, heat olive oil over medium heat. Add chopped onion and garlic, and sauté until softened.
  2. Add ground turkey and cook until browned.
  3. Stir in diced sweet potatoes, diced tomatoes, corn, chicken broth, chili powder, cumin, salt, and pepper.
  4. Bring to a boil, then reduce heat and let simmer for about 25-30 minutes or until sweet potatoes are tender.
  5. Serve hot and enjoy your comforting chili!

Notes

Top with shredded cheese, chopped green onions, or sour cream. This chili pairs well with cornbread or tortilla chips.
