Ingredients

  • 1 cup cooked rice
  • 1 lb ground beef or chicken
  • 1 can black beans, rinsed and drained
  • 1 cup corn, frozen or canned
  • 1 cup diced tomatoes
  • 1 packet taco seasoning
  • 1 cup shredded cheese
  • 1 avocado, sliced
  • Sour cream, for serving
  • Fresh cilantro, for garnish

Instructions

  1. In a large skillet, cook the ground beef or chicken over medium heat until browned. Drain excess fat.
  2. Stir in the taco seasoning and follow the packet instructions to incorporate with the meat.
  3. In a large bowl, combine the cooked rice, black beans, corn, and diced tomatoes. Mix well.
  4. Add the seasoned meat to the rice mixture and stir until everything is combined.
  5. Serve the mixture in bowls and top with shredded cheese, avocado slices, a dollop of sour cream, and garnish with fresh cilantro. Enjoy!

Notes

For a vegetarian option, substitute meat with crumbled tofu or more beans and vegetables. Customize with preferred toppings.
