- 1 cup cooked rice
- 1 lb ground beef or chicken
- 1 can black beans, rinsed and drained
- 1 cup corn, frozen or canned
- 1 cup diced tomatoes
- 1 packet taco seasoning
- 1 cup shredded cheese
- 1 avocado, sliced
- Sour cream, for serving
- Fresh cilantro, for garnish
Instructions
- In a large skillet, cook the ground beef or chicken over medium heat until browned. Drain excess fat.
- Stir in the taco seasoning and follow the packet instructions to incorporate with the meat.
- In a large bowl, combine the cooked rice, black beans, corn, and diced tomatoes. Mix well.
- Add the seasoned meat to the rice mixture and stir until everything is combined.
- Serve the mixture in bowls and top with shredded cheese, avocado slices, a dollop of sour cream, and garnish with fresh cilantro. Enjoy!
Notes
For a vegetarian option, substitute meat with crumbled tofu or more beans and vegetables. Customize with preferred toppings.
