- 1 can black beans, drained

- 1 cup diced tomatoes
- 1 tablespoon taco seasoning

- 1 avocado, sliced

- Fresh cilantro, for garnish
Instructions
- Cook rice according to package instructions.
- In a large skillet, brown the ground beef or chicken over medium heat.
- Add black beans, corn, diced tomatoes, and taco seasoning to the skillet. Stir well, and let it simmer for 5-7 minutes.
- Fluff the cooked rice and divide it among serving bowls.
- Top each bowl with the meat mixture, cheese, avocado slices, and salsa.
- Garnish with fresh cilantro before serving.
