Taco Rice Bowl

Ingredients

  • 1 pound ground beef or chicken
  • 1 can black beans, drained
  • 1 cup corn, frozen or canned

  • 1 cup shredded cheese
  • 1 avocado, sliced
  • 1/2 cup salsa
  • Fresh cilantro, for garnish

Instructions

  1. Cook rice according to package instructions.
  2. In a large skillet, brown the ground beef or chicken over medium heat.
  3. Add black beans, corn, diced tomatoes, and taco seasoning to the skillet. Stir well, and let it simmer for 5-7 minutes.
  4. Fluff the cooked rice and divide it among serving bowls.
  5. Top each bowl with the meat mixture, cheese, avocado slices, and salsa.
  6. Garnish with fresh cilantro before serving.
