Tanghulu is a delightful Chinese treat featuring fruit coated in a crunchy sugar layer, making it a fun and visually appealing snack.

Ingredients

  • 1 lb strawberries, grapes, or other fruit of choice (~30 pieces)
  • 2 cups white sugar
  • 1 cup water

Instructions

  1. Wash the fruit and pat it dry. Remove any leaves, stems, or inedible parts.
  2. Place the fruit onto skewers, aiming for 3 pieces or fewer per skewer for easier management.
  3. In a small pot on low to medium heat, add sugar and water without stirring.
  4. Bring the mixture to a boil and simmer until it becomes thick, syrupy, and amber in color (about 300°F), this takes about 10-20 minutes.
  5. To test if the syrup is ready, drizzle a spoonful into an ice water bath. If it hardens within seconds and cracks when bent, it’s perfect.
  6. Quickly dip the fruit skewers into the syrup, swirling to coat them evenly, then dip into the ice water bath to cool and harden the sugar coating.
  7. Place the skewers on a plate and repeat with the remaining fruit, working quickly to prevent the sugar from burning.

Notes

Best enjoyed fresh; store in an airtight container at room temperature for 1-2 days.
