- 4 pieces Chicken Breasts (boneless, skinless)
- 3 tablespoons Honey (for marinade)
- 2 tablespoons Lime Juice (freshly squeezed)
- 1 tablespoon Lime Zest
- 2 cloves Garlic (minced)
- 1 teaspoon Ground Cumin
- Salt (to taste)
- Pepper (to taste)
- 1 cup Jasmine Rice (or basmati)
- 2 cups Chicken Broth
- 2 pieces Avocado (diced)
- 1 small Red Onion (finely chopped)
- 1/4 cup Fresh Cilantro (chopped)
- 1 tablespoon Olive Oil
- 4 pieces Lime Wedges (for garnish)
Instructions
- In a bowl, mix together honey, lime juice, lime zest, minced garlic, ground cumin, salt, and pepper. Add the chicken breasts and coat them well. Let them marinate for at least 30 minutes.
- In a pot, bring chicken broth to a boil. Add jasmine rice, reduce the heat to low, and cover. Cook for about 15-20 minutes or until the rice is tender and the broth has been absorbed.
- Heat olive oil in a pan over medium heat. Remove the chicken from the marinade and cook for about 6-7 minutes per side, or until fully cooked and no longer pink in the center.
- In a bowl, combine diced avocado, red onion, and fresh cilantro. Season with a little salt and mix well.
- Fluff the rice with a fork. Layer the rice, then the chicken, and top with the avocado mixture. Garnish with lime wedges.
Notes
Use fresh lime juice for the best flavor. Let the chicken marinate longer for a more intense taste. Add more spices or hot sauce if you prefer a kick of heat.
