- 1 cup orzo pasta
- 2 cups vegetable broth
- 1 cup mushrooms, sliced
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a medium pot, heat olive oil over medium heat. Add chopped onion and sauté until translucent.
- Add minced garlic and sliced mushrooms, cooking until mushrooms are tender.
- Stir in the orzo and toast for a minute.
- Pour in vegetable broth, bring to a boil, then reduce heat and simmer until the orzo is al dente, about 10 minutes.
- Season with salt and pepper to taste.
- Remove from heat and garnish with fresh parsley before serving.
Notes
Feel free to add other vegetables like spinach or bell peppers for extra flavor. You can also make it creamy by adding a splash of cream or butter.
