Tender Crock Pot Beef and Broccoli

A delicious and easy slow-cooked meal featuring tender beef and fresh broccoli.

Ingredients

  • 1 pound beef (flank steak or sirloin), thinly sliced
  • 2 cups broccoli florets
  • 1/2 cup soy sauce
  • 1/2 cup beef broth
  • 1/4 cup brown sugar
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 2 tablespoons cornstarch
  • 2 tablespoons water
  • Cooked rice (for serving)

Instructions

  1. In a slow cooker, combine the sliced beef, soy sauce, beef broth, brown sugar, garlic, and ginger. Mix well.
  2. Cover and cook on low for 5-6 hours or until the beef is tender.
  3. About 30 minutes before serving, add the broccoli florets to the slow cooker.
  4. In a small bowl, mix cornstarch and water to create a slurry. Stir it into the slow cooker to thicken the sauce.
  5. Let it cook for an additional 30 minutes.
  6. Serve over cooked rice.

Notes

Use fresh ingredients for the best flavor. For thicker sauce, add more cornstarch mixed with water. Consider adding red pepper flakes for a spicy kick.
