- 1 cup mascarpone cheese (room temperature)
- 1/2 cup powdered sugar
- 1/2 teaspoon vanilla extract
- 1 tablespoon espresso or strong coffee (cooled)
- 1/2 teaspoon cocoa powder (plus extra for dusting)
- 1/2 cup ladyfinger crumbs (or graham crackers)
- 8 oz semi-sweet or dark chocolate (for coating)
- 2 oz white chocolate (optional drizzle)
- Mini chocolate chips (optional garnish)
Instructions
- In a large bowl, combine the mascarpone cheese, powdered sugar, vanilla extract, cooled espresso, and cocoa powder. Mix until smooth and creamy.
- Stir in the ladyfinger crumbs or graham crackers until fully incorporated.
- Cover and chill the mixture in the refrigerator for about one hour.
- Once chilled, scoop and roll the mixture into 1-inch balls and place them on a tray lined with parchment paper.
- Freeze the truffles for 15 to 20 minutes.
- Melt the semi-sweet or dark chocolate using a double boiler or microwave.
- Dip each truffle into the melted chocolate, tap off excess chocolate, and place back on the parchment-lined tray.
- Optionally, drizzle with melted white chocolate and sprinkle with mini chocolate chips.
- Dust with extra cocoa powder before the coating sets.
- Chill in the refrigerator until the chocolate coating is firm, about 30 minutes.
Notes
Use room temperature mascarpone for a smoother mixture. These truffles can be frozen and stored for up to three months.
