Ganache Cookies

Ingredients

  • ½ cup granulated sugar
  • ½ cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • ½ cup unsweetened cocoa powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ teaspoon espresso powder (optional)
  • ½ cup unsalted butter, softened
  • ½ cup granulated sugar
  • ½ cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1½ cups all-purpose flour
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 23 teaspoons freeze-dried raspberry powder or pink food coloring
  • ½ cup heavy cream
  • ¾ cup dark or white chocolate chips, finely chopped
  • 1 tablespoon butter (optional)
  • Freeze-dried raspberries
  • Chocolate squares
  • Heart sprinkles
  • Melted white chocolate (for drizzling)

Instructions

  1. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar for the chocolate dough until light and fluffy. Add egg and vanilla extract, and mix until combined.
  2. Gradually stir in the flour, cocoa powder, baking soda, salt, and optional espresso powder. Set aside.
  3. For the pink cookie dough, use the same method with specified ingredients.
  4. Chill both doughs covered in the fridge for 30 minutes.
  5. Preheat the oven to 350°F (180°C). Scoop portions of each dough, roll into balls, and arrange on a parchment-lined baking sheet.
  6. Press a well into the center of each ball. Bake for 10 to 12 minutes until soft in the center.
  7. Cool on the baking sheet for a few minutes, then transfer to a wire rack to cool completely.
  8. For the ganache, heat the heavy cream until almost boiling, pour over the chopped chocolate, let sit for a minute, and stir until smooth. Add butter if desired.
  9. Fill the cooled cookies’ wells with ganache and add desired toppings.
  10. Allow cookies to set at room temperature or refrigerate briefly before serving.
