  • 2 tablespoons sugar
  • 1 packet (2 1/4 teaspoons) active dry yeast
  • 1/2 teaspoon salt
  • 1/2 cup milk, warmed
  • 2 large eggs
  • 2 tablespoons butter, melted
  • 1 teaspoon vanilla extract
  • Oil for frying
  • Powdered sugar for dusting

Instructions

  1. In a mixing bowl, combine warm milk, yeast, and sugar. Let sit for about 5 minutes until foamy.
  2. Add flour, salt, eggs, melted butter, and vanilla extract to the yeast mixture. Mix until a soft dough forms.
  3. Knead the dough on a floured surface for about 5 minutes until smooth.
  4. Place the dough in a greased bowl, cover, and let it rise in a warm place until doubled in size (about 60 minutes).
  5. Roll out the dough on a floured surface to 1/2 inch thick and cut into squares.
  6. Heat oil in a deep fryer to 360°F (182°C).
  7. Fry the beignets in batches until golden brown on both sides.
  8. Remove and drain on paper towels.
  9. Dust with powdered sugar and serve warm.

Notes

Ensure the milk is warm but not too hot, as high temperatures can kill the yeast. Kneading the dough well helps create a light texture. Fry in small batches to avoid overcrowding.
