Vegan Teriyaki Noodle Bowl with Crispy Tofu

A vibrant and flavorful vegan noodle bowl featuring sautéed noodles, fresh veggies, and crispy tofu in a homemade teriyaki sauce.

Ingredients

  • 1 block (14-16 oz / 400-450g) Extra-Firm Tofu
  • 2 tbsp Soy Sauce (or Tamari for Gluten-Free)
  • 1 tbsp Cornstarch (for coating tofu) + 1 tbsp + 2 tbsp cold water (for sauce)
  • 1 tbsp Neutral Oil (like Avocado or Canola) for tofu, plus another for sautéing
  • ½ cup Low-Sodium Soy Sauce (or Tamari for Gluten-Free)
  • ½ cup Water or Vegetable Broth
  • ¼ cup Maple Syrup (or Agave Nectar)
  • 2 tbsp Rice Vinegar
  • 1 tbsp Toasted Sesame Oil
  • 2 cloves Garlic, minced
  • 1 tbsp Fresh Ginger, grated or minced
  • 1 large head Broccoli, cut into small florets
  • 2 medium Carrots, peeled and julienned
  • 1 Red Bell Pepper, seeded and thinly sliced
  • 45 Green Onions, sliced
  • 1 cup Edamame, shelled
  • Optional: Pinch of Red Pepper Flakes, Toasted Sesame Seeds, Extra Sliced Green Onions for garnish

Instructions

  1. Press the tofu to remove excess liquid, cut it into ¾-inch cubes, and toss it with soy sauce and cornstarch until evenly coated.
  2. In a large skillet, heat neutral oil over medium heat, add the tofu cubes in a single layer, and cook until golden and crispy (about 10-12 minutes), then remove from the skillet.
  3. In the same skillet, combine low-sodium soy sauce, water, maple syrup, rice vinegar, sesame oil, minced garlic, and ginger. Bring to a simmer.
  4. Create a slurry with cornstarch and cold water, stir it into the simmering sauce until thickened (about 1-2 minutes) and add a pinch of red pepper flakes if desired.
  5. Add more oil if necessary and sauté the broccoli, carrots, and bell pepper until vibrant and crispy (around 3-4 minutes).
  6. Prepare noodles per package instructions, drain, and mix them with the crispy tofu and teriyaki sauce in the skillet.
  7. Transfer to bowls and garnish with edamame, sliced green onions, and toasted sesame seeds.

Notes

Best served fresh, but can be stored in an airtight container in the fridge for 2-3 days. Freezing may alter texture.
