- 1 lb ground beef
- 1 packet taco seasoning
- 1 can black beans, drained and rinsed
- 1 cup corn, frozen or canned
- 1 cup diced tomatoes
- 2 cups shredded cheese (cheddar or Mexican blend)
- 1 bag Fritos corn chips
- 1 cup diced bell pepper
- 1 cup diced onion
- Sour cream, for serving
- Chopped cilantro, for garnish (optional)
Instructions
- Preheat oven to 350°F (175°C).
- In a large skillet, brown the ground beef over medium heat. Drain any excess fat.
- Stir in the taco seasoning and add black beans, corn, and diced tomatoes. Cook for about 5 minutes until heated through.
- Layer half of the beef mixture in a greased baking dish.
- Add a layer of diced bell peppers, onions, and half of the cheese.
- Top with half of the Fritos.
- Add the remaining beef mixture, followed by the rest of the cheese and Fritos.
- Bake for 25-30 minutes until the cheese is melted and bubbly.
- Serve hot with sour cream and cilantro if desired.
Notes
Adjust the spice level by using mild or spicy taco seasoning. For added flavor, consider sautéing the onions and bell peppers with the ground beef.
