White Chicken Chili

A warm and hearty White Chicken Chili that combines chicken, white beans, and corn with flavorful spices for a comforting meal.

Ingredients

  • 2 cups cooked chicken, shredded
  • 1 can white beans, rinsed and drained
  • 1 can corn, drained
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 4 cups chicken broth
  • 1 cup heavy cream or sour cream
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Heat a large pot over medium heat and sauté the diced onion and minced garlic until the onion is translucent (3-5 minutes).
  2. Add the cooked chicken, rinsed white beans, drained corn, ground cumin, chili powder, and chicken broth to the pot. Stir to combine.
  3. Increase the heat and bring the mixture to a boil, then reduce the heat to low and simmer for about 15 minutes.
  4. Stir in the heavy cream or sour cream to make the chili creamy.
  5. Taste and season with salt and pepper.
  6. Serve hot, garnished with fresh cilantro.

Notes
