Ingredients

- 2 cups cooked chicken, shredded
- 1 can white beans, rinsed and drained
- 1 can corn, drained
- 1 onion, diced
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 4 cups chicken broth
- 1 cup heavy cream or sour cream
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Heat a large pot over medium heat and sauté the diced onion and minced garlic until the onion is translucent (3-5 minutes).
- Add the cooked chicken, rinsed white beans, drained corn, ground cumin, chili powder, and chicken broth to the pot. Stir to combine.
- Increase the heat and bring the mixture to a boil, then reduce the heat to low and simmer for about 15 minutes.
- Stir in the heavy cream or sour cream to make the chili creamy.
- Taste and season with salt and pepper.
- Serve hot, garnished with fresh cilantro.
