- 1 head cabbage
- 1 medium carrot
- 2 tablespoons olive oil
- 1 medium onion
- 2 cloves garlic
- 1 unit red bell pepper
- 1 teaspoon fresh thyme
- 2 scallions
- Salt to taste
- 1 cup water
- 1 unit Scotch bonnet pepper
Instructions
- Chop the cabbage into thin slices.
- Peel and slice the carrot, shredding if desired.
- In a large pan, heat the olive oil over medium heat.
- Add the chopped onion and garlic to the pan and sauté until soft and fragrant.
- Toss in the sliced cabbage, carrot, and red bell pepper, stirring to mix.
- Sprinkle in the fresh thyme, add scallions and salt to taste.
- Pour in the water (or vegetable broth) and add the Scotch bonnet pepper.
- Cover the pan and cook for 10-15 minutes, stirring occasionally, until the cabbage is tender.
Notes
Serve warm as a main dish or side, pairing with rice, quinoa, or wraps. Adding lime juice enhances flavor.
