Ingredients

- 2 large zucchinis
- 1 cup ricotta cheese
- 1 cup mozzarella cheese, shredded
- 1/2 cup parmesan cheese, grated
- 1 egg
- 1 cup marinara sauce
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Olive oil
Instructions
- Preheat the oven to 375°F (190°C).
- Slice the zucchinis lengthwise into thin strips. Sprinkle with salt and let them sit for 10 minutes to draw out moisture.
- In a bowl, mix the ricotta cheese, mozzarella cheese, parmesan cheese, egg, minced garlic, Italian seasoning, salt, and pepper.
- Pat the zucchini strips dry with paper towels.
- Spread a small amount of marinara sauce on the bottom of a baking dish.
- Take a zucchini strip, add 1-2 tablespoons of the cheese mixture, and roll it up. Place it seam-side down in the dish.
- Repeat with the remaining zucchini strips and filling.
- Once all the rolls are in the dish, pour the remaining marinara sauce over the top and sprinkle with additional mozzarella cheese.
- Drizzle with olive oil.
- Cover with foil and bake for 25 minutes, then uncover and bake for an additional 15 minutes or until the cheese is bubbly and golden.
- Let cool for a few minutes before serving.
Notes
Serve warm, garnished with fresh basil or extra parmesan cheese. Pairs well with a side salad or garlic bread.
