Zucchini Rollatini

A healthy and delicious Italian dish featuring zucchini rolled with a rich cheese filling and marinara sauce.

Ingredients

  • 2 large zucchinis
  • 1 cup ricotta cheese
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup parmesan cheese, grated
  • 1 egg
  • 1 cup marinara sauce
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Slice the zucchinis lengthwise into thin strips. Sprinkle with salt and let them sit for 10 minutes to draw out moisture.
  3. In a bowl, mix the ricotta cheese, mozzarella cheese, parmesan cheese, egg, minced garlic, Italian seasoning, salt, and pepper.
  4. Pat the zucchini strips dry with paper towels.
  5. Spread a small amount of marinara sauce on the bottom of a baking dish.
  6. Take a zucchini strip, add 1-2 tablespoons of the cheese mixture, and roll it up. Place it seam-side down in the dish.
  7. Repeat with the remaining zucchini strips and filling.
  8. Once all the rolls are in the dish, pour the remaining marinara sauce over the top and sprinkle with additional mozzarella cheese.
  9. Drizzle with olive oil.
  10. Cover with foil and bake for 25 minutes, then uncover and bake for an additional 15 minutes or until the cheese is bubbly and golden.
  11. Let cool for a few minutes before serving.

Notes

Serve warm, garnished with fresh basil or extra parmesan cheese. Pairs well with a side salad or garlic bread.
